This course is specifically designed for Managers and/or Supervisors directly involved in the supervision of staff involved with food handling.

This qualification has been developed to benefit anyone working in a supervisory position where food is prepared, cooked and served.
It is relevant to all catering operations for example, pubs, hotels, restaurants, travel, contact catering, fast food outlets, hospitals, care and nursing homes, schools, prisons and the armed forces.
The course will give you an understanding of :

  • terminology used in respect to supervising food safety procedures.
  • Supervisor’s role in ensuring compliance with UK and European food safety legislation
  • The concept of contamination and the risks it imposes on food safety
  • The role temperature plays in the control of food safety
  • Importance of good workplace and equipment design to ensure food safety
  • Importance of supervising high standards of cleanliness in the food premises
  • The importance of good pest control practice
  • The need for high standards of personal hygiene
  • Importance of being able to contribute to staff training
  • Principles of the HACCP system and how a supervisor can contribute to the implementation of food safety management systems in catering enterprise
  • Function of tools, such as Safer Food, Better Business, in implementing a food safety management system

 It is recommended that candidates have already successfully completed the CIEH Level 2 Award in Food Safety in Catering.

 Assessment carried out by 60 question multiple choice test paper on the final day 40-50 pass and 50+ Merit

 The current fees for the academic year 2012/13 are £155.00. This includes registration with the awarding body and a designated course book.
